They feature a double-bevelled edge, providing an excellent combination of sharpness and durability. Their distinctive curved upper blade also serves an important function, letting you cut more cleanly and with less force. Because the curved edge is longer than the straight edge, it pulls along the surface of what you're cutting, creating a slicing action in addition to the standard shearing action of conventional scissors. ("Hikigiri" is a Japanese term meaning "cutting while pulling.")
